Chocolate Ganache

Ganache is so versatile you can use it for a number of desserts and treats, as an all over covering on your cake, or an under fondant layer to create crisp, clean edges and of course for them all important drips!

It is simply made of chocolate and cream, below we give the ratios recommended for chocolate to cream, however these can all be adjusted to suit your needs. For example, if you would like a thicker ganache you can increase the amount of chocolate you use, leaving ganache to chill will also provide you with a thicker product to work with. Whilst setting the ganache makes for great chocolate treats, just scoop out and roll them in some cocoa powder, desiccated coconut or sprinkle with salt afterwards!

Most beginners find dark chocolate ganache the easiest ganache to perfect. We recommend using high quality chocolate, in both stores we have milk, dark and white chocolate buttons which are perfect for tempering and creating ganache. Chocolates like Cadburys can often seize in the heat of the cream which is why it is better to go for a chocolate with a higher cocoa percentage.

Ratios:

Dark Chocolate
2 parts chocolate : 1 part cream (e.g. 500g chocolate with 250g cream)

Milk Chocolate
2.5 parts chocolate : 1 part cream (e.g. 500g chocolate with 200g cream)

White Chocolate

3 parts chocolate : 1 part cream (e.g. 500g chocolate with 167g cream)

 

Method:

  • Roughly chop the chocolate into small pieces and set aside in a bowl,
  • Heat the cream through in a pan until it’s showing small bubbles around the edge, be careful not to boil or burn the cream,
  • Pour the cream over the chocolate and let sit for a minute or two,
  • Grab a whisk or a spoon and mix it all together, the ganache should look glossy and smooth,
  • Let it set to your desired consistency and enjoy!
